There apparently ARE options...
Poking about on Edmunds.com produced this extremely short list of options on the '08 Challenger. Unfortunately, we'll apparently have to wait for the '09s for the Chrysler Solid State AM-only radio and vinyl top options.

Pretty much every dealership is ordering the 2008's fully loaded, and with the 2008's at least, it's going to be more of get what you ordered or if by chance you find one on a lot, you get what's available.
